Happy St. Patricks Day, friends! It’s the day of green, and in the spirit of eating festively, I’ve compiled a few recipes to bite into this holiday. It’s no secret that green foods are great for you. The following treats are inspired by today’s favorite color — so sip away and bite into these festive recipes as you celebrate the luck of the Irish!
SPINACH FRITTATA
Ingredients:
6 eggs
1 Tablespoon mayonnaise
1 Tablespoon salsa verde
3 handfuls raw spinach
A small handful (1/2 cup) of parmesan
Salt and Pepper
1/2 milk or cream (I’m using unsweetened almond milk)
½ cup goat cheese
Directions:
Preheat oven to 375
In a bowl, whisk your eggs, mayo, salsa, and mayo.
Toss in some salt and pepper and mix in.
Stir in your spinach until it’s coated with your egg mixture.
Pour into a greased cast iron or baking dish.
Bake for about 25-30 minutes or until the eggs are set. Don’t overcook!
I’m a condiment addict, so of course I’m serving mine with a little salsa verde on the side!

SHAVED ASPARAGUS BREAKFAST PIZZA
Ingredients:
1 pre-made dough
1/2 cup pesto
1/2 cup chopped kale
6-8 stalks asparagus, shaved with a vegetable peeler or mandolin
1/2 cup fresh mozzarella
2 tablespoons olive oil
Salt and pepper to taste
5-6 eggs
Directions:
Preheat your oven to 425 degrees.
On a floured baking sheet or pizza stone, stretch your dough to cover the surface.
Spread the dough with your pesto, and then arrange your kale, asparagus, mozzarella, and olive oil on the dough. Sprinkle with salt and pepper.
Place in the oven, and bake for about 12 minutes, or until crust is just beginning to golden.
Remove from the oven, and gently crack your eggs onto the dough.
Place back in the oven and bake for about 8 minutes, or until whites of the eggs are completely set.
Remove, and let your pizza sit for about 5 minutes. Then slice and serve warm with extra pesto on the side.

AVOCADO & POMEGRANATE SALSA
Ingredients:
1 can of garbanzo beans, rinsed
1 avocado, pitted and diced
1 cup pomegranate seeds
1 cup feta cheese
1 large tomato, diced
2 garlic cloves, peeled and chopped finely
Large handful of cilantro, chopped
Juice of two limes
Directions:
Combine all ingredients and serve with your favorite tortilla chip!

MINT & MEZCAL SMASH
Ingredients:
½ oz simple syrup
Juice of one lime
1.5 oz mezcal
Handful of mint leaves
2 slices of lime
Sparkling water
Directions:
In a cocktail glass, muddle your simple syrup with your lime juice, one lime slice, and a few mint leaves. Add in your mezcal and stir well, about 15 seconds. Add in a scoop of crushed ice, and stir again. Top with sparkling water, and garnish with extra mint and your remaining lime slice!
