A Note From The Editor: Changing the world, wherever we are, starts small. As individuals, before we can think about excelling at our careers, in our relationships, or with our art, we need to take care of ourselves. It’s surprising how so few of us really know how to do the simple things anymore, so we’ve set out to change that with Kara Elise.

Avocado and egg toast is one of my favorite breakfasts. Its satisfying, beautiful, and so packed with amazing things. I love adding variations and changing up the condiments and spices. In a culture that is so fast paced, it’s often difficult to intentionally slow down and enjoy the morning. This breakfast is one that I love to make just for me, to remind myself that hosting myself is one of the most refreshing and life-giving activities that sets my intention for the entire day.

Avocado + Egg Toast

Sliced bread (ciabatta/ whole wheat/ gluten free)
Two eggs
Avocado (about a half)
Olive oil
Salt and pepper
Greens (arugula/ frisee/ microgreens)

Toast your bread.
Fry an an egg with a bit of olive oil.
Smash sliced avocado onto the bread.
Add the egg and sprinkle with the cheese and the greens.
Top with salt and pepper to flavor.

Optional condiment inclusions: Sriracha, ailoi, sundried tomatoes, sweet potato, hummus.

Slowly enjoy your toast with a cup of coffee. This mindful and slow morning will set the pace for the rest of your day.

  1. This is such a dream! The best avo toast I ever had was from Porch in Parlor near Bondi Beach. This meal is one of my favorite food memories 🙂
