A Note From The Editor: Changing the world, wherever we are, starts small. As individuals, before we can think about excelling at our careers, in our relationships, or with our art, we need to take care of ourselves. It’s surprising how so few of us really know how to do the simple things anymore, so we’ve set out to change that with Kara Elise.
I love having friends over for lunch. There is something so special about welcoming someone into your home and into your space. As a confidant, we can practice this art of intentionality when we choose to invite others into our lives. This salad is an easy, quick, and colorful lunch to help create that space.
Apricot + Arugula Salad
Ingredients:
Arugula (about 4 cups)
Couscous
Dried apricots
Apricot Stilton Cheese (mine is from Trader Joe’s)
Basic Vinaigrette
Directions:
In a large serving bowl, add your washed greens. Cook your couscous according to the directions on the package. Chop your dried apricots into bite size pieces and add to the bowl. Add your crumbled apricot cheese and your cooked couscous.
For the basic vinaigrette, add about 1/2 cup each of olive oil and vinegar to a lidded jar or container. Add a spoonful of honey, put on the lid, and shake liberally until all of the ingredients are well mixed. Top the salad with the vinaigrette and use mixing spoons to coat all of the ingredients.
Serve with a toasted slice of ciabatta for a perfect lunch in.
NOTE: This salad is fantastic with grilled or shredded chicken if you’d like some extra protein!

Yuuuuuum! Bite-sized greens for the win. Humongous salad leaves give me a special kind of nerves… Love the couscous!
I just had Arugula pizza this weekend and really enjoyed it. Pairing Arugula with Apricot would be an interesting mix of flavors, and I definitely think a fresh salad is a great way to entertain and invite friends!
